Utilizing diverse experiences to promote the depth of Japanese Unagi, Mr. Mizoguchi was born in 1978 in Saga. He began his career gaining experience in various types of restaurants across Tokyo, starting with front-of-house service before transitioning to the kitchen. His career later included management roles at foreign-owned restaurants. At Kyo Unawa, he proudly showcases the allure of unagi using traditional techniques, serving signature dishes such as unaju and hitsumabushi, alongside seasonal Japanese delicacies. In Kyoto, where food connoisseurs from Japan and abroad gather, he shares the rich tradition of Japanese unagi culture every day.
