Bringing unforgettable flavors with "New Hokkaido Japanese cuisine" made from the abundant resources of the northern sea and land.

Mr. Kobayashi was born in 1980 in Niigata. He is the head chef at ELM GARDEN. After spending his school years in Kanagawa Prefecture and working at a ranch in Chiba Prefecture, he entered the culinary world when he got a job at a sushi restaurant in Yokohama. While honing his skills, he traveled to Hokkaido and was impressed by the freshness of the seafood and other ingredients. So he moved to Sapporo and honed his skills at a Japanese restaurant. In 2004, he joined the current restaurant at its founding and was appointed Executive Chef in 2014. With the theme of "New Hokkaido Japanese cuisine", he explores the true essence of Hokkaido Japanese cuisine that highlights local seasonal ingredients, offering a diverse array of delicious dishes.
