GRAHM'S CAFE　Los Angeles (Kyobashi｜Cafe)

An Italian dish made with touches of American cooking for a pasta loaded with meaty savoriness. Instead of ragu, we use a sauce made from pork ribs slow-cooked for two hours, then seasoned with fragrant rosemary and orange oil. This dish goes well with white wine. The red eggplants of Miyazaki are intensely sweet, with no bitter aftertaste. To bring out their very best natural flavors, we simply roast them with chickpeas, and serve with dip. Our chef uses the simple methods of American cuisine as the foundation of his cooking style, bringing delectable flavors to life with his dishes to the delight of his guests.
