Ms. Karasawa is a native of Hakodate, Hokkaido. She is a third-generation sushi chef, following in the footsteps of her grandfather and father. Having now struck out on her own, she runs Sushi Nayuta. This restaurant offers courses that highlight the region's appealing ingredients - a culinary experience that could only be delivered by Hakodate, attracting visitors from both Japan and abroad.
