From the chef
A passion for cooking that blossomed in the Showa era is now leading to techniques in haute cuisine and memories of flowers.
Mr. Serizawa was born in Shizuoka Prefecture in 1969, he was influenced by TV and manga to attend culinary school in the Showa era, when the restaurant industry was booming. After obtaining his qualifications, he trained at a restaurant at an art museum in Mishima, where be became the head chef for haute cuisine. After going out on his own, he gained experience as head chef at several establishments. He opened the restaurant Uchiyosuru in September 2025. He also carries on the legacy of his late mother's flower shop.
