Mr. Kanata was born in 1985 in Osaka. The chef's culinary philosophy originates from the Edo period text, "Shizen Shineido (The Way of Nature and Labour)". With its teachings as his guiding principle, he honed his skills at renowned Japanese restaurants in Osaka and Kyoto. His dedication led him to become the head chef at Kanazawa's esteemed Japanese restaurant, Kaga Masa, where he earned a Michelin star. In October 2022, he became independent and opened Higashiyama Shinnei. The name of the restaurant was inspired by "Shizen Shineido."
