The popular yakiniku restaurant Daishogun from Toyama takes on the challenge of offering the ultimate yakiniku unique to Kanazawa. The meat is carefully selected by Wagyu beef chefs through its own channels, and the cuts are prepared by hand with the utmost care. The restaurant proposes reliable, excellent items based on the know-how it has accumulated since the establishment of the main restaurant in 1987. Ingredients include local specialties such as "Noto beef," representing Ishikawa. The rice is cooked using brewing water ((Hyakunen Sui)) from Fukumitsuya, a long-established sake brewery in Kanazawa. Rice carefully cooked in a kamado pot with the local spring water is exquisite. For special occasions like business meetings or anniversaries, course meals featuring the flavors of Kaga Hyakuman-goku are recommended. The quaint space of a renovated 170-year-old machiya (traditional townhouse) is also worth seeing. A visit to this establishment promises to be a delightful addition to your memories of Kanazawa.
