Buen Katsuo no Arai Fu uses bonito processed on-ship immediately after they are caught, keeping their meat beautifully red

This refreshing and flavorful dish combines thinly sliced bright red unsalted bonito with garlic vinegared miso. Quickly chilling the meat gives it a springy texture, allowing you to further enjoy the inherent flavor of unsalted bonito.

The Makurazaki Katsuo (bonito) Funado meshi (Fisher Meal) lets you enjoy the whole fish by using it's high grade bonito sashimi and dashi (Japanese broth)

The Makurazaki Bonito Fisher Meal is a Kagoshima Shopping District Gourmet Grand Prix award winning meal. Warm rice is topped with fresh marinated bonito, bonito flakes, and bonito wafers, then topped with dashi (Japanese broth). The dashi is made from the full-bodied, flavorful, and fragrant Makurazaki specialty, "High-Grade Bonito."

The Makurazaki Eki (Station) Meal -- lets you enjoy a taste of each of each popular dish, such as those using Kagoshima buta (Berkshire pork) and unsalted bonito

This is a luxurious menu item that allows you to enjoy local ingredients together in a single tray, such as Berkshire pork in cutlet and stewed form, and unsalted bonito in sashimi and seared form. We recommended eating the bonito's fatty stomach skin together with a cup of sake.

Each fish is killed alive on board the boat, and the bright red meat is beautiful.

This refreshing dish features thinly sliced bright red bonito fish served with garlic and vinegared miso. The quick freezing process creates a chewy texture, allowing you to fully enjoy the flavor of the bonito fish.

"Makurazaki Katsuo Funato Meshi" allows you to enjoy every bit of bonito, including bonito broth and sashimi.

"Katsuo Funato Meshi" won the Kagoshima Prefecture Shopping District Gourmet Grand Prix. It is made by placing fresh marinated bonito, dried bonito flakes, and bonito crackers on warm rice and pouring dashi over it. The dashi is made from "Honkarebushi", a specialty of Makurazaki, which has a rich aroma and flavor.
