Shime Saba (vinegared mackerel) - Exceptionally fresh! The aging process creates a deep and rich flavor that is truly remarkable.

This dish highlights exquisite craftsmanship: mackerel sourced from the renowned Bungo Channel fishing grounds is live-slaughtered and aged for three days. As it is never frozen, its smooth texture and rich umami flavor, which develops with each bite, will surely bring a smile to your face.
